Flour and Dough Conditioners

 

Thermphos offers a wide range of phosphate leavening acids, or acidulants, for use in bakery applications. Each acidulant has a different rate of reaction (RoR) with sodium carbonate and a different neutralisation value (NV) . These differences can be used to give different characteristics to the finished products.
